Last night, for dinner, I fixed a spinach salad with grilled chicken, sliced strawberries, mango and red onion dressed in a strawberry-walnut vinaigrette and a nice crusty bread to go with it. Since our Carolina jasmine is in bloom on the fence and the tulips are coming up, why not have a spring salad for dinner? If the tulips can pretend it’s not winter, then so can I.
Like a hummingbird, Sean was drawn by the bright colors on my plate. I assumed that after one bite, he’d make a face and go back to his chicken nuggets and green beans. But then he asked for another bite. And another. After he had nearly cleaned my plate, he said to me with a degree of sincerity that only a little boy can muster, “Thank you Mommy for making a strawberry.”
Too few will be the days that my boy believes that I can make a strawberry.
Oh, and then I enjoyed the remainder of the chicken nuggets and green beans. Yum.
